Taco Biscuit Cups

Featured in: Small bites and starters

Taco Biscuit Cups are a fun and easy way to enjoy the classic flavors of tacos in a convenient, bite-sized form. Each cup is made by lining muffin tins with refrigerated biscuit dough, then filling them with a savory mixture of seasoned ground beef, Rotel tomatoes, and green chilies. Topped with cheddar cheese and baked until golden, these delicious cups are perfect for snacks, appetizers, or even as a quick family meal. They’re easy to prepare and a sure hit at any gathering. Serve them warm, and feel free to add your favorite taco toppings like sour cream, salsa, or guacamole.

These taco-filled biscuit cups are a total game-changer for dinner time. I came up with this idea when I was tired of regular tacos falling apart on my kids' plates. Now we can't get enough of these neat little cups filled with seasoned meat and melty cheese.

My picky eater actually asks for seconds when I make these. Last week, he even helped press the biscuits into the muffin tin - though we did end up with flour everywhere!

What You'll Need

  • Ground Beef: I usually grab the lean kind, but regular works too.
  • Biscuit Dough: The regular size from the dairy aisle.
  • Taco Mix: Any brand you like.
  • Shredded Cheese: We love cheddar, but use your favorite.
  • Fresh Toppings: Whatever your family enjoys.

Let's Make Them

Getting Started:
Heat up your oven nice and hot. Spray your muffin tin really well. Brown your meat in a big pan. Add your taco seasoning and a splash of water. Let it simmer until it's not soupy.
Making the Cups:
Pop open your biscuits. Press each one into a muffin cup. Push the dough up the sides. Fill them with your taco meat. Top with plenty of cheese.
Into the Oven:
Bake until they're golden brown. The cheese should be all melty. Let them cool a bit before eating.

My kids love setting up a "taco bar" with all the toppings. It's become our Friday night tradition, and even their friends ask to stay for dinner when they know these are on the menu.

Making Them Your Own

Sometimes I use ground turkey instead of beef, or add some corn and beans to stretch the meat further. The other day I mixed in some diced peppers, and nobody even noticed they were eating extra veggies!

These little cups have saved dinner time at my house more times than I can count. They're just right for busy nights, and somehow they always bring smiles to the table. Give them a try - I bet they'll become a regular at your house too!
