Preheat oven to 400°F. Spray a muffin tin with nonstick cooking spray.

Brown ground beef in a large skillet for 8-10 minutes until cooked through. Drain excess grease.

Add taco seasoning and water to beef. Simmer until liquid is absorbed (about 5 minutes). Stir in cilantro if using.

Press biscuits into muffin tin cups, pushing dough up the sides to form cups.

Fill biscuit cups with meat mixture, top with cheese, and bake 10-12 minutes until golden brown.
