This breakfast casserole has saved me so many Christmas mornings. I just throw everything in the crockpot before bed and wake up to the most amazing smell. What You Need

  • Sausage: One pound cooked and crumbled I use turkey sausage sometimes
  • Hash Browns or Tater Tots: The big 32 oz bag
  • Peppers: One red and one green diced up
  • Onion: Just one yellow onion chopped
  • Cheese: Two cups of Pepper Jack or Monterey Jack
  • Eggs: A full dozen
  • Milk: One cup
  • Salt and Pepper: To taste
  • Optional: Green chiles cilantro or whatever toppings you like

Putting It Together

Get Everything Ready
Cook up your sausage and chop the veggies. Give your crockpot a good spray so nothing sticks.
Start Layering
Put down some hash browns then sausage peppers onions and cheese. Do this three times.
The Egg Part
Beat up your eggs with milk salt and pepper until they're really well mixed. Pour this all over everything in the crockpot.

Saving Some For Later

Leftovers last about 3 days in the fridge but they never stick around that long at my house. If you want to freeze some cut it into squares first then put them in freezer bags. Just pop them in the microwave when you want a quick breakfast.

Ingredients

01 12 eggs.
02 1 cup milk or half & half cream.
03 2 pounds frozen hash brown potatoes.
04 1 pound bulk breakfast sausage, cooked.
05 1/2 cup onions, diced.
06 1/2 cup red & green bell peppers, diced.
07 1 1/2 cups cheddar cheese, freshly shredded.
08 1 1/2 cups pepper jack cheese, freshly shredded.
09 1 teaspoon kosher salt.
10 1/2 teaspoon black pepper.

Instructions

Step 01

Spray crockpot with cooking spray. Mix cheeses together in one bowl, combine cooked sausage with peppers and onions in another.

Step 02

Beat eggs well, then whisk in milk, salt and pepper.

Step 03

Put 1/3 of hash browns in crock, top with 1/3 sausage mixture, then 1 cup cheese.

Step 04

Repeat layers two more times, ending with remaining cheese.

Step 05

Pour egg mixture over everything.

Step 06

Cover and cook on low for 8 hours.
