These tacos are what happens when a drive-thru craving meets a hot skillet. You press ground beef right onto a tortilla and sear it until the edges turn crispy and lacey. The result is part smash burger, part taco, and entirely faster than waiting in line.

What goes on the tortilla

The smash and sear

  1. Whisk the sauce. Stir mayonnaise, French dressing, pickle relish, minced onion, vinegar, sugar, garlic, and a pinch of salt in a bowl. Set it in the fridge so the flavors meld while you cook.
  2. Portion the beef. Divide one pound into eight equal balls, about two ounces each. Season with salt and pepper.
  3. Press it thin. Place a beef ball in the center of a tortilla. Cover with parchment paper and press firmly with a spatula or burger press until the meat covers almost to the edges. Thin meat means a faster sear and crisper edges.
  4. Sear meat-side down. Heat a large skillet or griddle over medium-high heat until a drop of water sizzles instantly. Lay the taco meat-side down and cook for one to two minutes without moving it. The beef should shrink and crisp at the edges.
  5. Flip and melt. Use a thin spatula to flip so the tortilla is now on the hot surface. Lay a slice of American cheese on the beef and cook for another one to two minutes until the cheese softens and the tortilla toasts.
  6. Top and serve. Transfer to a plate. Add lettuce, pickles, onion, a drizzle of sauce, and sesame seeds. Fold like a taco and eat immediately while the contrast is hot and cold.

Why thin patties win

Smashing the beef flat against the tortilla does two things. It creates more surface area touching the hot metal, which builds a dark, lacy crust. It also cooks the meat in under two minutes per side, so the tortilla stays intact and does not burn.

If the meat is too thick, you end up with a steamed burger that slides off the tortilla. Press until you can almost see through it in spots. Those thin spots crisp into the best bites.

Sauce in one bowl

The sauce is just a quick mix of pantry staples. French dressing gives it that signature sweetness and orange tint. If you do not have any, whisk together ketchup and a teaspoon of sweet pickle juice as a substitute.

Build it to order
