This is the dessert I bring when I want something that looks impressive but does not turn on the oven. Six distinct layers stack into a cool, creamy slab that feeds a crowd and always disappears before the ice melts in the cooler. It works because each layer is simple on its own, but together they taste like a strawberry cheesecake in spoonable form.

The hardest part is waiting for it to chill. You spread the crust, beat the cream cheese, whisk the pudding, pile on the berries, and let the fridge do the rest. I have made this for summer birthdays, potlucks, and once for a Tuesday that just needed something sweet. Every time someone asks for the recipe before the pan is empty.

The six layers at a glance

Every layer here has a job. The cookie crust gives you something to press your fork against. The cream cheese layer adds tang and richness, the pudding layer brings body, and the fresh strawberries cut through all that cream with real fruit flavor. Top it with whipped topping and a few extra crumbs and you have a dessert that tastes far more involved than it is.

Buy the best strawberries you can find when they are in season. The rest of the ingredients are pantry and dairy staples you probably already have.

  • Golden Oreo crumbs. A sweet, buttery base that sets up firm in the fridge and contrasts the soft layers above.
  • Unsalted butter. Binds the crumbs together so the crust slices cleanly instead of crumbling.
  • Cream cheese. The heart of the cheesecake flavor. Let it soften fully or you will fight lumps.
  • Powdered sugar. Dissolves instantly into the cream cheese for a smooth, sweet layer.
  • Cheesecake instant pudding mix. Thickens with milk into a velvety layer that holds its shape when sliced.
  • Cold milk. Whisked into the pudding until thick and creamy.
  • Whipped topping. Folded into both the cream cheese and pudding for an airy, light texture.
  • Fresh strawberries. Sliced and layered over the pudding for bright, juicy pockets in every bite.
  • Strawberry preserves. Optional, but a thin warmed drizzle over the berries deepens the fruit flavor and adds shine.

How the layers stack

  1. Press the crust. Stir the cookie crumbs with melted butter until evenly moist, then press firmly into the bottom of a 9 by 13 inch dish. Chill while you mix the fillings.
  2. Beat the cheesecake layer. Whip the softened cream cheese with powdered sugar until completely smooth, then fold in one third of the whipped topping. Spread evenly over the chilled crust.
  3. Mix the pudding. Whisk the cheesecake pudding mix with cold milk for about two minutes until it thickens. Fold in another third of the whipped topping and spread over the cream cheese layer.
  4. Add the berries. Arrange sliced strawberries in an even layer over the pudding. Warm the preserves slightly and drizzle over the berries if you want extra gloss and flavor.
  5. Finish and chill. Spread the remaining whipped topping over the strawberries, then scatter a handful of cookie crumbs or a few berry slices on top. Cover and refrigerate at least four hours, or overnight for the cleanest slices.

The crust sets the stage

Do not rush the crust. Press it firmly and evenly so it holds together when you slice. I use the flat bottom of a measuring cup to compact the crumbs into a solid layer. If the butter is not fully incorporated you will end up with dry, loose spots that fall apart on the plate.

Golden Oreos give a vanilla cookie flavor that pairs well with berries, but graham crackers or shortbread crumbs work too. For a nutty twist, try the approach from our cherry pecan cheesecake lush and add toasted pecans to the crumbs.

Soft cream cheese is non-negotiable

Cold cream cheese will never smooth out completely, no matter how long you beat it. Leave the block on the counter for at least an hour, or microwave it in ten-second bursts until it yields to a gentle poke. The filling should look like thick frosting before you fold in the whipped topping.

Berry choices and smart swaps

Fresh strawberries sliced about a quarter inch thick layer best and hold their texture after chilling. Frozen berries thaw out too soft and release water that can bleed into the pudding. If fresh are not available, thaw frozen ones completely and pat them very dry with paper towels before using.

You can swap the strawberries for blueberries, raspberries, or a mix. Our coconut cream lush dessert uses the same method with a tropical spin. For a chocolate-strawberry version, swap the cheesecake pudding for chocolate and use chocolate cookie crumbs throughout.

Chill thoroughly before slicing

This dessert needs a minimum of four hours in the refrigerator for the pudding to set and the layers to firm up enough to cut cleanly. Overnight is even better. The flavors also deepen as it sits, so making it a day ahead is actually ideal.

Cover the dish tightly with plastic wrap so the whipped topping does not pick up stray odors from the fridge. For food safety, the U.S. FDA recommends keeping refrigerated desserts below 40 degrees Fahrenheit, see the FDA safe food handling guide.

FAQs

Can I use frozen strawberries instead of fresh?

Thaw them completely and drain on paper towels first. Even then, they will be softer than fresh and may tint the pudding layer pink. Fresh berries give the best texture and appearance.

How far in advance can I make this?

You can assemble it up to 24 hours ahead. The crust stays crisp and the flavors meld together beautifully. Any longer and the strawberries start to soften too much.

What can I use instead of Golden Oreos?

Graham crackers, vanilla wafers, or shortbread cookies all work. Pulse them into fine crumbs and use the same butter ratio. Chocolate Oreos are also delicious with strawberries.

Why did my cream cheese layer turn out lumpy?

The cream cheese was too cold. It must be fully softened to room temperature before beating. Cold cream cheese will leave small lumps that never smooth out.

Can I make this in individual cups?

Yes. Layer the components in small glasses or cups for personal servings. They chill faster and look elegant on a dessert table. Reduce the chilling time to about two hours.

How long do leftovers keep?

Cover tightly and refrigerate for up to three days. The crust will gradually soften and the berries will weep slightly, but it still tastes great.

Is there a lighter version?

Use reduced-fat cream cheese, light whipped topping, and skim milk. The texture will be slightly less rich but still very good. You can also reduce the cookie crumbs by a third.
