Tender cinnamon pears sit between cool layers of honey-sweetened Greek yogurt. Chopped walnuts add a crisp finish. Let the cooked fruit cool before layering so the yogurt stays thick and the glasses show distinct bands.
Ingredients
- 3 ripe firm pears, about 450 g
- 15 g butter
- 2 tbsp honey, divided
- ½ tsp ground cinnamon
- 1 tbsp lemon juice
- 400 g thick Greek yogurt
- ½ tsp vanilla extract
- 40 g chopped walnuts
Method
- Peel, core and cut the pears into small cubes. Weighing about 450 g before trimming gives roughly 350 g prepared fruit.
- Melt the butter in a skillet over medium heat. Add the pears, one tablespoon of honey, cinnamon and lemon juice. Cook for 8–10 minutes, stirring gently, until tender and lightly glazed. If the pan becomes dry before the pears soften, add one tablespoon of water.
- Transfer the pears and their juices to a shallow bowl. Cool for about 30 minutes, until no longer warm. Keep the yogurt refrigerated while the pears cool.
- Stir the yogurt with the vanilla and remaining tablespoon of honey. Divide half the yogurt between four small glasses, then add half the pears. Repeat the yogurt and pear layers.
- Sprinkle the chopped walnuts over the cups just before serving so they stay crisp. Serve cool with a spoon reaching through both layers.
- Cover and refrigerate for up to two days, keeping the walnuts separate until serving. Refrigerate promptly after assembly.
Choose pears that hold their shape
Ripe but firm pears soften into cubes without turning to puree. Very soft fruit cooks more quickly; check early and stir gently.
Cool the fruit before layering
Spread the pears in a shallow bowl to cool faster. Warm fruit loosens the yogurt and blurs the layers. Keep both components covered if preparing ahead.
Use thick yogurt
Strained Greek yogurt gives the cups enough body without whipped cream. Stir only until the honey and vanilla are mixed in.
Add walnuts at the table
Keeping the nuts separate preserves their crunch. Spoon them onto each cup immediately before serving.
