Vietnamese Rice Paper Rolls (Print Version)

# Ingredients:

01 - 7-14 rice paper sheets (22cm/8.5").
02 - 11 cooked prawns.
03 - 50g dried vermicelli noodles.
04 - 7 soft lettuce leaves.
05 - 14 mint leaves.
06 - 1 cup bean sprouts.
07 - 1 tablespoon peanut butter.
08 - 2 tablespoons hoisin sauce.
09 - 1 1/2 tablespoons white vinegar.
10 - 1/3 cup milk.
11 - 1 garlic clove, minced.
12 - 1/2 teaspoon chili paste (optional).

# Instructions:

01 - Mix peanut sauce ingredients, microwave 30 seconds, stir until smooth.
02 - Soak vermicelli in warm water 2 minutes, drain.
03 - Halve and devein prawns.
04 - Bundle vermicelli and sprouts in lettuce leaves.
05 - Dip two rice papers together in warm water for 2 seconds.
06 - Place prawns and mint on top portion.
07 - Add lettuce bundle in middle.
08 - Fold sides in, roll up tightly from bottom.
09 - Serve with peanut sauce.

# Notes:

01 - Use two rice papers for easier handling.
02 - Can make 6 hours ahead.
03 - Wrap individually if storing.
04 - Great for DIY party setup.
