Ultimate Healthy Beef Ramen Noodles (Print version)

Lean beef, crisp vegetables, and chewy ramen noodles tossed in a savory garlic ginger sauce for a lighter 30-minute dinner.

# Ingredients:

For the sauce

01 - 3/4 cup (180 ml) low-sodium beef broth
02 - 2 tablespoons low-sodium soy sauce or tamari
03 - 1 tablespoon oyster sauce
04 - 1 tablespoon unseasoned rice vinegar
05 - 2 teaspoons honey
06 - 1 teaspoon toasted sesame oil
07 - 1 teaspoon chili garlic sauce or sriracha, optional

For the noodles and beef

08 - 6 oz (170 g) ramen noodles, seasoning packets discarded
09 - 1 lb (450 g) 93% lean ground beef
10 - 1 tablespoon avocado oil or olive oil
11 - 2 cups (180 g) small broccoli florets
12 - 1 cup (110 g) matchstick carrots
13 - 1 cup (90 g) sliced mushrooms
14 - 1 cup (85 g) snow peas
15 - 3 cloves garlic, minced
16 - 1 tablespoon fresh ginger, grated
17 - 3 green onions, sliced
18 - 1 teaspoon sesame seeds, optional
19 - Salt and black pepper, to taste

# Instructions:

01 - In a small bowl, whisk together the broth, soy sauce, oyster sauce, rice vinegar, honey, sesame oil, and chili garlic sauce. Set it near the stove.
02 - Boil the ramen noodles without the seasoning packets until just loosened and still firm, about 2 minutes. Drain, rinse briefly with cool water, and set aside.
03 - Heat a large skillet over medium-high heat. Add the beef, season lightly with salt and pepper, and cook for 5-6 minutes until browned and no pink remains. Drain excess fat if needed, then transfer the beef to a plate.
04 - Add the oil to the same skillet. Add broccoli, carrots, mushrooms, and snow peas. Cook for 4-5 minutes, stirring often, until the vegetables are bright and crisp-tender.
05 - Stir in the garlic and ginger for 30 seconds until fragrant. Return the beef to the skillet, pour in the sauce, and simmer for 1 minute.
06 - Add the drained ramen and green onions. Toss for 1-2 minutes until the noodles are hot, glossy, and evenly coated. Sprinkle with sesame seeds and serve right away.

# Good to know:

01 - Use the ramen noodles only, not the seasoning packets.
02 - Best served immediately while the vegetables are crisp.
03 - Add a splash of broth when reheating leftovers.
