03 - 1.5 cups (120 g) sweetened shredded coconut, plus extra for coating
04 - 30 g powdered sugar
05 - 1 teaspoon vanilla extract
06 - Pinch of fine salt

# Instructions:

01 - In a medium mixing bowl, blend the drained crushed pineapple, sweetened condensed milk, 1.5 cups shredded coconut, powdered sugar, vanilla extract, and salt. Mix until cohesive and sticky.
02 - Cover the bowl with plastic wrap and refrigerate for 30 minutes to enhance flavour integration and achieve a firmer texture.
03 - Retrieve the mixture from the refrigerator. Scoop approximately one tablespoon per portion and roll into compact spheres using lightly greased hands if needed.
04 - Place extra shredded coconut into a shallow bowl. Roll each ball in the coconut until fully coated, ensuring an even exterior.
05 - Arrange the coated balls on a parchment-lined tray and refrigerate for an additional 30 minutes to ensure firmness before serving.
