Sweet Potato Ground Beef Casserole Recipe (Print Version)

# Ingredients:

01 - 2 medium sweet potatoes, diced.
02 - 1 tablespoon olive oil.
03 - 1/2 teaspoon salt.
04 - 1/2 teaspoon black pepper.
05 - 1/4 teaspoon garlic powder.
06 - 2 teaspoons dried rosemary.
07 - 1 pound lean ground beef.
08 - 1 medium yellow onion, diced.
09 - 14.5 oz vegetable broth.
10 - 1/2 cup heavy cream.
11 - 1 1/3 cups instant rice.
12 - 2 cups shredded cheddar.
13 - 2 teaspoons parsley.

# Instructions:

01 - Preheat to 400°F. Dice potatoes and toss with oil and seasonings in casserole dish.
02 - Roast sweet potatoes for 30 minutes.
03 - Brown beef in skillet, add onions and cook until soft.
04 - Add broth, cream, rice and beef mixture to potatoes. Cover and bake 15 minutes.
05 - Top with cheese and bake uncovered 10 more minutes.
06 - Let cool 10-15 minutes, garnish with parsley.

# Notes:

01 - Use any color sweet potatoes.
02 - Drain fat if using higher fat beef.
03 - Can substitute chicken broth.
