Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.

In a small bowl, whisk together egg and water. Set aside.

In a food processor or stand mixer, combine almond paste, granulated sugar, and vanilla extract until well combined.

Unfold the puff pastry sheet on the prepared baking sheet. Gently roll it with a rolling pin to slightly enlarge and thin out the sheet.

Cut slits 1 inch apart along both sides of the pastry rectangle, leaving a 1/2-inch border in the center for the almond paste mixture. Place the almond paste filling down the center of the pastry.

Starting at one end, fold the pastry strips diagonally over the almond mixture, alternating sides to create a braided effect. Lightly brush the pastry with the egg wash. Sprinkle with sliced almonds.

Bake for 10 minutes at 400°F, then lower the temperature to 375°F and continue baking for 17-20 minutes, or until the pastry is golden brown.
