Strawberry Mousse with Creamy Texture and Fresh Berries (Print version)

A silky strawberry mousse made with fresh berries, whipped cream, and a light set so each spoonful stays creamy, airy, and bright.

# Ingredients:

For the strawberry base

01 - 1 lb (450 g) fresh strawberries, hulled and chopped
02 - 1/3 cup (65 g) granulated sugar
03 - 1 tablespoon fresh lemon juice
04 - 1 1/2 teaspoons unflavored powdered gelatin
05 - 2 tablespoons cold water
06 - 4 oz (115 g) cream cheese, softened

For the whipped cream

07 - 1 cup (240 ml) cold heavy whipping cream
08 - 1/4 cup (30 g) powdered sugar
09 - 1 teaspoon vanilla extract

For serving

10 - 1 cup fresh sliced strawberries or mixed berries
11 - Fresh mint leaves, optional

# Instructions:

01 - Sprinkle the gelatin over 2 tablespoons cold water in a small bowl. Let it stand for 5 minutes until the granules absorb the water and swell.
02 - Combine the chopped strawberries, granulated sugar, and lemon juice in a saucepan. Cook over medium heat for 4-5 minutes, stirring often, until the berries soften and release their juice.
03 - Blend the warm strawberry mixture until smooth. Strain through a fine-mesh sieve if you want an extra silky mousse, then return the puree to the warm pan off the heat.
04 - Stir the bloomed gelatin into the warm strawberry puree until completely melted. Let the mixture cool to room temperature, about 15 minutes.
05 - Beat the softened cream cheese in a large bowl until smooth. Beat in the cooled strawberry puree a little at a time until no white streaks remain.
06 - In a separate bowl, beat the cold heavy cream, powdered sugar, and vanilla until medium peaks form. The cream should hold soft ridges without looking dry.
07 - Fold the whipped cream into the strawberry base in three additions. Spoon into 6 small cups, cover, and refrigerate for at least 3 hours or until softly set.
08 - Top each cup with fresh sliced strawberries or mixed berries right before serving. Add mint if desired.
