Southern Breakfast Enchiladas Gravy (Print Version)

Tortillas are stuffed with fluffy eggs, cheese, and topped with warm sausage gravy for a comforting Southern breakfast.

# Ingredients:

→ Enchilada Filling

01 - 6 large flour tortillas
02 - 1 tablespoon unsalted butter
03 - 6 large eggs
04 - 60 ml whole milk
05 - Salt, to taste
06 - Black pepper, to taste
07 - 100 g shredded cheddar cheese
08 - 60 g shredded Monterey Jack cheese
09 - 120 g cooked breakfast potatoes or hash browns (optional)
10 - 2 green onions, thinly sliced

→ Sausage Gravy

11 - 225 g pork breakfast sausage (or turkey/chicken sausage as an alternative)
12 - 2 tablespoons all-purpose flour
13 - 360 ml whole milk
14 - Salt, to taste
15 - Black pepper, to taste
16 - 0.25 teaspoon garlic powder (optional)

# Instructions:

01 - In a skillet over medium heat, cook the sausage, breaking it apart with a spatula until browned and fully cooked. Sprinkle the flour over the sausage and stir to coat evenly. Cook for 1 minute. Gradually pour in the milk while stirring continuously to prevent lumps. Simmer until the gravy has thickened, approximately 5 minutes. Season to taste with salt, black pepper, and, if desired, garlic powder. Keep warm.
02 - In a mixing bowl, whisk together the eggs, milk, a pinch of salt, and black pepper. Melt butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook gently, stirring softly, until the eggs are just set. Remove from the heat.
03 - Preheat oven to 190°C (375°F). Lightly grease a 23x33 cm baking dish. Divide scrambled eggs, cooked potatoes (if using), green onions, and shredded cheeses among the tortillas. Roll each tortilla firmly and place seam-side down in the prepared dish.
04 - Pour the prepared sausage gravy uniformly over the assembled enchiladas. Sprinkle additional cheese on top if desired.
05 - Cover the baking dish with foil and bake for 15 minutes. Remove foil and continue baking for an additional 5–10 minutes, or until the dish is bubbling and thoroughly heated.
06 - Garnish with extra green onions before serving. Accompany with hot sauce or fresh fruit as preferred.

# Notes:

01 - For a lighter option, turkey or chicken sausage can be used in place of pork sausage.
02 - Pre-cooked hash browns or roasted potatoes add texture but may be omitted for a lighter dish.
03 - Letting the gravy thicken before pouring it over the tortillas prevents sogginess.
