# Ingredients:

For the pancakes

01 - 1 large egg, separated
02 - 3/4 cup (95 g) all-purpose flour
03 - 1 teaspoon baking powder
04 - 1 teaspoon granulated sugar
05 - 1/4 teaspoon fine salt
06 - 1/2 cup (120 ml) whole milk
07 - 1 tablespoon neutral oil, divided

For the burger stacks

08 - 9 oz (255 g) ground beef, 80/20 or 85/15
09 - 1/2 teaspoon kosher salt
10 - 1/4 teaspoon black pepper
11 - 2 slices American cheese or mild cheddar
12 - 2 tablespoons burger sauce, plus more for serving
13 - 1/3 cup (55 g) sliced dill pickles

# Instructions:

01 - Beat the egg white in a clean bowl until soft peaks form. Set it aside while you mix the batter.
02 - Whisk the egg yolk, flour, baking powder, sugar, salt, and milk until smooth. Gently fold in the whipped egg white, keeping as much air in the batter as possible.
03 - Heat half the oil in a nonstick skillet over medium heat. Cook 4 small pancakes for 2-3 minutes per side, until golden and set. Keep warm on a plate.
04 - Divide the beef into 2 loose balls. Heat the remaining oil in the skillet over high heat, add the beef balls, and smash each one very thin with a sturdy spatula. Season with salt and pepper.
05 - Cook the patties for 2-3 minutes, until the bottoms are deeply browned. Flip once, top each with cheese, and cook 1-2 minutes more until melted and the beef is cooked through.
06 - Spread burger sauce on 2 pancakes. Add a cheesy patty and sliced pickles to each, then top with the remaining pancakes. Serve immediately with extra sauce if desired.
