Seafood Chowder (Print Version)

# Ingredients:

01 - 1/4 cup butter.
02 - 1 medium onion, diced.
03 - 1 teaspoon Old Bay seasoning.
04 - 1/4 teaspoon dried thyme.
05 - 1/4 cup all-purpose flour.
06 - 1 celery rib, sliced.
07 - 1 carrot, sliced.
08 - 1 pound potatoes, peeled and cubed.
09 - 1/2 cup corn kernels.
10 - 5 cups chicken or seafood broth.
11 - 1/2 cup white wine.
12 - 8 ounces white fish chunks.
13 - 8 ounces sea scallops.
14 - 12 ounces medium shrimp, peeled.
15 - 6.5 ounces chopped clams, drained.
16 - 2 cups heavy cream.
17 - 1 tablespoon fresh parsley.

# Instructions:

01 - Melt butter in large pot and cook diced onion until softened and translucent.
02 - Stir in flour, Old Bay seasoning and thyme, cooking for 2-3 minutes to remove raw flour taste.
03 - Add sliced carrots, celery, cubed potatoes, corn kernels, broth and wine to the pot.
04 - Bring mixture to a boil, then reduce heat and simmer for 10 minutes until vegetables start softening.
05 - Carefully add all seafood - fish, scallops, shrimp and clams to the simmering broth.
06 - Pour in heavy cream and continue cooking 8-10 minutes until fish flakes and potatoes are tender.
07 - Season to taste with salt and pepper, then stir in fresh chopped parsley before serving.
