Sausage and Mash Pie (Print Version)

# Ingredients:

01 - 28 oz pork sausages (about 12).
02 - 3 cups beef stock.
03 - 1/2 cup red wine.
04 - 14 oz onions, sliced.
05 - 4 tablespoons plain flour.
06 - 3 tablespoons butter.
07 - 2 tablespoons Worcestershire sauce.
08 - 1/4-1/2 teaspoon dried thyme.
09 - 4.4 lbs white potatoes.
10 - 1.5 cups cheddar cheese.
11 - 1/2 cup milk or cream.
12 - 4 tablespoons butter for potatoes.
13 - 1 tablespoon Dijon mustard.
14 - Salt and pepper to taste.
15 - Olive oil as needed.

# Instructions:

01 - Cook potatoes in salted water until tender, drain and steam dry for 5 minutes.
02 - Mash potatoes with butter, milk, cheese and mustard. Season well.
03 - Brown sausages until cooked through, remove and slice diagonally.
04 - Caramelize onions in sausage fat until golden, about 15 minutes.
05 - Make roux with butter and flour, add wine and stock gradually. Add seasonings and simmer.
06 - Layer sausages and gravy in dish, let rest, then top with mashed potatoes.
07 - Bake at 200°C/390°F for 20 minutes until golden.

# Notes:

01 - Place dish on baking tray to catch leaks.
02 - Let components dry slightly for best texture.
03 - Can be made ahead and refrigerated.
