Easy Sangria Jello Shots (Print version)

Fruity red wine jello shots with citrus liqueur, berry juice, raspberries, oranges, and apple pieces.

# Ingredients:

For the gelatin base

01 - 1 cup (240 ml) cranberry-raspberry juice
02 - 3 packets unflavored gelatin, about 3 tablespoons
03 - 1/4 cup (60 ml) orange liqueur, such as triple sec
04 - 1/2 cup (120 ml) reserved mandarin orange syrup or orange juice
05 - 2 1/4 cups (540 ml) fruity red wine or sweet red sparkling wine

For the fruit cups

06 - 1 cup drained mandarin orange segments, cut into small pieces
07 - 1 cup fresh raspberries
08 - 1 medium apple, peeled, cored, and finely diced
09 - 1 tablespoon fresh lemon juice

# Instructions:

01 - Pour the cranberry-raspberry juice into a microwave-safe measuring cup or small saucepan. Heat until steaming hot but not boiling.
02 - Sprinkle the gelatin evenly over the hot juice. Let it stand for 5 minutes, then whisk until completely dissolved and smooth.
03 - Add the orange liqueur, mandarin syrup or orange juice, and red wine. Stir gently and skim off any foam from the top.
04 - Arrange 24 to 30 small 2-ounce cups on a rimmed sheet pan. Divide the mandarin oranges and raspberries among the cups.
05 - Toss the diced apple with lemon juice, then divide it among the cups so it stays bright and fresh.
06 - Pour the sangria gelatin mixture over the fruit. Cover and refrigerate for at least 3 hours, or until fully set.

01 - Chill time is at least 3 hours and is not included in the active cooking time.
02 - Serve cold and keep covered until ready to share.
