Once the sugar is fully melted, add the 1 cup of honey, continuing to stir as the mixture bubbles. Then, stir in the vanilla extract to enhance the flavor.

Add the roasted almonds into the mixture, ensuring they are evenly coated. Turn off the heat once everything is well combined.

Pour the mixture onto the prepared baking sheet, spreading it out evenly. Sprinkle a pinch of salt over the top. Allow the brittle to cool and harden completely.
