Whisk eggs, sugar, and salt together.

Add flour, milk, and vanilla. Mix until smooth but don't overmix.

Heat oil to 375°F in deep fryer or heavy pan.

Heat rosette iron in oil for 2 minutes.

Dip heated iron in batter 7/8 up sides, then immediately into hot oil.

Fry until golden, about 30 seconds.

Remove to paper towel-lined rack, gently remove from iron.

Dust with powdered sugar before serving.
