Roasted Potatoes with Baked Feta (Print Version)

Warm roasted potatoes, creamy feta, and herby garlic make the perfect flavorful side dish.

# Ingredients:

01 - 1-2 large baking potatoes, washed and cubed
02 - 200 g block of feta cheese
03 - 2 tablespoons olive oil, divided
04 - 1 teaspoon dried thyme
05 - 1 teaspoon dried oregano
06 - 1 teaspoon salt
07 - 1 teaspoon black pepper
08 - 1 head of garlic, top sliced off
09 - 1 lemon, quartered
10 - 1 tablespoon honey
11 - 20 g fresh basil, chopped

# Instructions:

01 - Preheat your oven to 200°C (390°F). Wash the potatoes thoroughly, cut them into cubes, and place them in a baking dish.
02 - Drizzle 1 tablespoon of olive oil over the potatoes. Sprinkle with dried thyme, oregano, salt, and black pepper. Toss well to coat evenly.
03 - Place the block of feta in the center of the baking dish. Press one side of the feta into the seasonings on the potatoes for extra flavor, then flip it over. Add the garlic head and half the lemon wedges to the dish. Drizzle the remaining olive oil over everything.
04 - Roast in the oven for 45-55 minutes until the potatoes are crispy and golden. Monitor the garlic to avoid over-browning and remove it after about 35 minutes if necessary.
05 - Once the garlic is cool enough to handle, squeeze the softened cloves out of their skins. Mash the roasted garlic into a paste and add it to the dish with juice from the remaining lemon wedges and chopped basil. Gently mix to combine the flavors.
06 - Drizzle the honey over the top and sprinkle with additional fresh basil for a final touch of flavor and color.
