# Ingredients:

01 - 4 medium beets (red, golden, or a mix), peeled and cut into wedges

08 - 1 ball (8 ounces) fresh burrata cheese
09 - 2 cups fresh arugula or mixed greens

11 - 2 tablespoons fresh parsley, finely chopped
12 - 2 tablespoons fresh basil leaves

→ Dressing

13 - 2 tablespoons balsamic glaze
14 - 1 tablespoon olive oil
15 - 1 teaspoon honey (optional)

# Instructions:

01 - Get your oven nice and hot by preheating to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup a breeze.
02 - Toss your beet wedges and carrot sticks in a large bowl with olive oil, salt, pepper, smoked paprika, and dried thyme until they're evenly coated in all that goodness.
03 - Spread your seasoned veggies in a single layer on your prepared baking sheet. Pop them in the oven for 35-40 minutes, giving them a flip halfway through. You're looking for tender vegetables with those gorgeous caramelized edges.
04 - While the vegetables are roasting, whisk together your balsamic glaze, olive oil, honey (if using), Dijon mustard, and fresh lemon juice in a small bowl. Give it a taste and adjust the seasonings to your liking.
05 - Start by laying down a bed of fresh arugula or mixed greens on a beautiful serving platter. Arrange your warm roasted vegetables on top, then tear the creamy burrata into generous chunks and nestle them throughout. Drizzle everything with your freshly made dressing.
