Crisp cabbage, apple, cranberries, walnuts, and green onions tossed in a creamy honey ginger dressing.

# Ingredients:

For the slaw

01 - 1 bag (14 oz / 397 g) tri-color coleslaw mix
02 - 1 large crisp apple, chopped into small bites
03 - 1 teaspoon fresh lemon juice, optional for the apple
04 - 1/2 cup (65 g) dried cranberries
05 - 1/2 cup (55 g) chopped walnuts, lightly toasted if desired
06 - 4 green onions, thinly sliced

For the dressing

07 - 1/2 cup (115 g) mayonnaise
08 - 1/2 cup (120 g) plain Greek yogurt or sour cream
09 - 3 tablespoons honey
10 - 1 tablespoon apple cider vinegar
11 - 3/4 teaspoon ground ginger
12 - 1/2 teaspoon fine salt, plus more to taste
13 - 1/4 teaspoon black pepper

# Instructions:

01 - Add the coleslaw mix, chopped apple, dried cranberries, walnuts, and green onions to a large bowl. Toss lightly to distribute the fruit and nuts.
02 - In a small bowl, whisk the mayonnaise, Greek yogurt, honey, apple cider vinegar, ground ginger, salt, and pepper until smooth and creamy.
03 - Pour about three quarters of the dressing over the slaw and toss until evenly coated. Add the remaining dressing only if the slaw looks dry.
04 - Cover and refrigerate for 20-30 minutes before serving. Stir once more, taste for salt and vinegar, and serve chilled.

# Good to know:

01 - Best texture within the first few hours after tossing.
02 - Use a firm apple so it stays crisp in the creamy dressing.
03 - Nutrition is an estimate per serving.
