5-Minute Protein Yogurt Pudding (Print version)

A thick, creamy no-cook protein yogurt pudding made with Greek yogurt, protein powder, and simple toppings in 5 minutes.

# Ingredients:

For the pudding

01 - 3/4 cup (170 g) plain nonfat Greek yogurt
02 - 1/2 scoop (15 g) vanilla whey protein powder
03 - 1 tablespoon (8 g) certified gluten-free instant vanilla pudding mix, dry
04 - 1-3 teaspoons milk of choice, as needed
05 - 1/4 teaspoon vanilla extract
06 - 1-2 teaspoons maple syrup or sugar-free sweetener, optional

For topping

07 - 1 tablespoon (16 g) peanut butter, melted or loosened
08 - 1 tablespoon (10 g) mini dark chocolate chips
09 - Fresh berries, optional

# Instructions:

01 - Add the Greek yogurt to a small mixing bowl and stir until creamy. This makes it easier to blend in the dry ingredients without lumps.
02 - Sprinkle in the protein powder and pudding mix in two additions, stirring well after each one until the mixture looks thick and smooth.
03 - Add milk 1 teaspoon at a time until the pudding is glossy and spoonable. Keep it thick, since the toppings will soften it slightly.
04 - Stir in the vanilla extract and sweetener if using. Taste before adding more sweetener because protein powders vary in sweetness.
05 - Spoon into a serving bowl. Drizzle with peanut butter and sprinkle with mini chocolate chips and berries if desired. Serve right away or chill for 10-15 minutes for a firmer pudding.

# Good to know:

01 - Use thick Greek yogurt for the creamiest texture.
02 - Chilling for 10-15 minutes makes the pudding firmer.
03 - Nutrition is an estimate and changes with protein powder and toppings.
