# Ingredients:

For the meatloaf

01 - 2 lb (900 g) 80/20 ground beef
02 - 1 cup (90 g) plain breadcrumbs
03 - 2 large eggs, beaten
04 - 1/2 cup (120 ml) whole milk
05 - 1/2 cup (75 g) finely diced green bell pepper
06 - 1/2 cup (75 g) finely diced yellow onion
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1 teaspoon kosher salt
10 - 1/2 teaspoon black pepper

For the filling

11 - 1 tablespoon olive oil
12 - 1 large yellow onion, thinly sliced
13 - 1 large green bell pepper, thinly sliced
14 - 8 oz (225 g) mushrooms, sliced
15 - 1 tablespoon Worcestershire sauce
16 - 1/4 teaspoon kosher salt
17 - 1/4 teaspoon black pepper
18 - 6 slices provolone cheese

For the topping

19 - 3/4 cup (85 g) shredded provolone cheese
20 - 1/2 cup (55 g) shredded mozzarella cheese
21 - 1 tablespoon chopped fresh parsley, optional

# Instructions:

01 - Heat the oven to 350 F. Grease a 9x5 inch loaf pan and set it on a rimmed baking sheet to catch any drips.
02 - Warm olive oil in a large skillet over medium heat. Add sliced onion, bell pepper, and mushrooms. Cook for 7-9 minutes, until softened and the skillet is no longer watery. Stir in Worcestershire sauce, salt, and pepper, then cool for 5 minutes.
03 - In a large bowl, combine ground beef, breadcrumbs, eggs, milk, diced bell pepper, diced onion, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
04 - Press half of the meat mixture into the prepared loaf pan. Spread the cooked filling over the beef and cover with the provolone slices. Add the remaining meat mixture on top and press the edges to seal.
