Place 2 flour tortillas on a baking sheet, spacing them evenly apart.

Spread a thin layer of marinara sauce evenly across the center of each tortilla. Sprinkle the mozzarella cheese shreds evenly over the sauce, then top with pepperoni.

Place the baking sheet under the broiler (on high if you have the option) on the bottom rack of your oven. Cook for a few minutes until the pepperoni is crispy and the cheese has melted. Remove from oven and set aside.

While the pizza bases are cooking, assemble the salad. If using a bagged Caesar salad kit, add the contents to a large bowl. If using homemade, combine your ingredients. If desired, add fresh lemon juice to brighten the flavors. Toss everything together and season with salt and pepper.

Scoop half of the Caesar salad onto each warm tortilla pizza. Carefully roll up each tortilla to form a wrap. Serve immediately while still warm.
