Easy Peanut Butter Rocky Road Bars with M&Ms (Print version)

No-bake peanut butter rocky road bars packed with chocolate, marshmallows, pretzels, peanuts, and colorful M&Ms.

# Ingredients:

For the chocolate base

01 - 12 oz (340 g) semi-sweet chocolate chips
02 - 3/4 cup (190 g) creamy peanut butter
03 - 3 tablespoons (42 g) unsalted butter
04 - 1/4 teaspoon fine salt

For the rocky road mix-ins

05 - 2 cups (90 g) mini marshmallows
06 - 1 cup (55 g) small pretzel twists, roughly broken
07 - 1/2 cup (70 g) roasted salted peanuts
08 - 3/4 cup (150 g) M&Ms, divided

# Instructions:

01 - Line an 8-inch square pan with parchment paper, leaving overhang on two sides for lifting the bars out later.
02 - Add the chocolate chips, peanut butter, butter, and salt to a microwave-safe bowl. Microwave in 20-second bursts, stirring after each, until smooth and glossy.
03 - Let the melted mixture cool for 5-8 minutes, stirring once or twice. It should be warm and fluid, not hot.
04 - Fold in the marshmallows, broken pretzels, peanuts, and 1/2 cup of the M&Ms until evenly coated.
05 - Scrape the mixture into the prepared pan. Press it into an even layer, then sprinkle the remaining 1/4 cup M&Ms on top and press lightly so they stick.
06 - Refrigerate for at least 1 hour, or until firm. Lift the slab out with the parchment and cut into 16 bars.
