In a bowl, mix thinly sliced beef sirloin with soy sauce and cornstarch until evenly coated. Let marinate for 15 minutes.

Heat half the vegetable oil in a large skillet or wok over high heat. Add the beef and stir-fry for 3 to 4 minutes until browned and just cooked. Remove from the skillet and set aside.

Add the remaining vegetable oil to the same skillet. Stir-fry sliced onion for 2 minutes until beginning to soften. Add minced garlic and grated ginger; continue stir-frying for 1 minute until aromatic.

Return beef to the skillet. Add oyster sauce, soy sauce, sugar, and beef broth. Stir well and cook for 2 to 3 minutes until sauce thickens and evenly coats beef and onion.

Drizzle with sesame oil, toss to combine, and garnish with chopped green onions. Serve immediately over steamed rice.
