Mexican Pastry (Print Version)

# Ingredients:

01 - 2½ cups all-purpose flour.
02 - ¼ teaspoon baking powder.
03 - ¼ teaspoon ground cinnamon.
04 - ¼ teaspoon table salt.
05 - 3 tablespoons unsalted butter, softened.
06 - 2 tablespoons sugar.
07 - 1 teaspoon vanilla extract.
08 - ½ cup hot water.
09 - Canola or vegetable oil for frying.
10 - 4 tablespoons sugar mixed with 1 teaspoon cinnamon for coating.

# Instructions:

01 - Combine flour, baking powder, cinnamon and salt in large bowl.
02 - Work butter into flour mixture until crumbly. Add sugar, vanilla, and water. Mix until dough forms.
03 - Knead dough 5-6 minutes until smooth. Cover and rest 15 minutes.
04 - Divide into 15 balls. Roll each into thin 6-7 inch circles.
05 - Cook disks on hot skillet about 10 seconds per side.
06 - Fry in 350°F oil until golden brown, pressing center to keep flat.
07 - Drain on paper towels and coat with cinnamon sugar while warm.
