Mediterranean-Style Steamed Clams Recipe (Print Version)

# Ingredients:

01 - Extra virgin olive oil (1/4 cup).
02 - Yellow onion, chopped (1).
03 - Green pepper, chopped (1/2).
04 - Red pepper, chopped (1/2).
05 - Garlic cloves, minced (4).
06 - Salt and pepper.
07 - Ripe tomatoes, chopped (2).
08 - Ground cumin (1/2 teaspoon).
09 - Smoked paprika (1/2 teaspoon).
10 - Red pepper flakes (1/2 teaspoon).
11 - Dry white wine (1 cup).
12 - Water (1 1/2 cups).
13 - Littleneck clams (3 pounds).
14 - Green onion, chopped (1).
15 - Fresh parsley, chopped (1/3 cup).

# Instructions:

01 - Soak in salted water three times, scrubbing between soaks.
02 - Sauté onions, peppers and garlic in olive oil.
03 - Add tomatoes, spices, wine and water; simmer.
04 - Add clams and cook covered until opened, 7-10 minutes.
05 - Add herbs and serve with crusty bread.

# Notes:

01 - Discard unopened clams.
02 - Can add chorizo variation.
03 - Keeps 2-4 days refrigerated.
