One Pot Marry Me Chicken Orzo (Print Version)

# Ingredients:

→ Main

01 - 650g chicken breast (about 4), skinless and boneless, chopped
02 - 250g orzo pasta

→ Aromatics & Vegetables

03 - 3 garlic cloves, peeled and crushed
04 - 170g sun-dried tomatoes in oil, drained
05 - 120g spinach

→ Liquids & Seasonings

06 - 1 tablespoon olive oil (or oil from sun-dried tomatoes)
07 - 650ml hot chicken stock
08 - 150ml double cream
09 - 1 teaspoon oregano
10 - 2 teaspoons paprika
11 - 50g grated Parmesan
12 - Freshly ground black pepper

# Instructions:

01 - Heat oil in large, deep frying pan over medium heat. Cook chicken pieces 5 minutes until colored on all sides.
02 - Reduce heat, add garlic, sun-dried tomatoes, oregano and paprika. Cook 3-5 minutes until garlic softens.
03 - Add orzo, stock, and pepper. Stir well, cover and cook 10 minutes, stirring occasionally, until orzo is almost done.
04 - On lowest heat, add spinach and cream. Stir 1-3 minutes until spinach wilts and cream heats through. Ensure chicken is cooked.
05 - Turn off heat and stir in Parmesan.

# Notes:

01 - Can use chicken thighs with adjusted cooking time
02 - Add extra liquid if needed to cook orzo fully
03 - One pot meal - everything cooks together
