# Ingredients:

→ Muffins

01 - 2 cups all-purpose flour
02 - 1 cup granulated sugar
03 - 1 teaspoon baking powder
04 - 1/2 teaspoon baking soda
05 - 1/4 teaspoon salt
06 - 1/2 cup unsalted butter, melted
07 - 1 cup buttermilk
08 - 2 large eggs
09 - 1 teaspoon vanilla extract
10 - Zest of 2 lemons
11 - Juice of 1 lemon

→ Cream Cheese Filling

12 - 8 ounces cream cheese, softened
13 - 1/4 cup granulated sugar
14 - 1 teaspoon vanilla extract

→ Lemon Glaze

15 - 1 cup powdered sugar
16 - 2 tablespoons lemon juice
17 - Zest of 1 lemon

# Instructions:

01 - Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
02 - In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
03 - In another bowl, combine melted butter, buttermilk, eggs, vanilla extract, lemon zest, and lemon juice.
04 - Pour the wet ingredients into the dry ingredients and mix until just combined.
05 - In a separate bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth.
06 - Fill each muffin liner halfway with batter. Add a spoonful of the cream cheese mixture in the center, then top with more batter until the liner is 3/4 full.
07 - Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
08 - Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
09 - In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest to make the glaze.
10 - Drizzle the glaze over the cooled muffins.
