Loaded Baked Potato With Beef Bites (Print Version)

# Ingredients:

→ Potatoes

01 - 4 large russet potatoes, scrubbed clean and patted dry
02 - 4 tablespoons olive oil
03 - 1.5 tablespoons sea salt

→ Steak

04 - 2 lbs steak (NY strip, ribeye, sirloin or tenderloin)
05 - 2 teaspoons kosher salt
06 - 2 tablespoons cajun seasonings, low sodium
07 - 4 tablespoons avocado oil, divided

→ Garlic Butter

08 - 2 tablespoons garlic, minced (about 8-10 cloves)
09 - 6 tablespoons butter, softened

→ Parmesan Cream Sauce

10 - 1 1/2 cups heavy cream
11 - 2/3 cup parmesan, grated
12 - 2 tablespoons fresh parsley, minced
13 - 2 wedges lemon, juice of
14 - 1/2-1 teaspoon red pepper flakes
15 - 1 teaspoon freshly cracked pepper

# Instructions:

01 - Preheat oven to 425°F. Rub potatoes with olive oil and sea salt. Place on parchment-lined pan and bake 50-60 minutes until tender.
02 - Trim and cut steak into 2" pieces. Coat with avocado oil and cajun seasoning.
03 - Sear steak in hot cast iron with avocado oil, 2 minutes per side. Reduce heat, add butter and garlic, toss to coat. Remove and tent with foil.
04 - In same pan, add butter and garlic. Add cream and simmer 3-5 minutes. Stir in parmesan, seasonings, parsley, and lemon juice until thickened.
05 - Drop baked potatoes to fluff interior. Split, spread with butter, and fluff with fork.
06 - Fill potatoes with steak bites and drizzle with parmesan cream sauce. Serve immediately.

# Notes:

01 - Can use any preferred cut of steak
02 - Low sodium cajun seasoning recommended
03 - Don't poke holes in potatoes before baking
