In a skillet over medium-high heat, cook ground beef, breaking it apart with a spoon until browned throughout. Season with salt and freshly ground black pepper. Remove from heat and set aside.

In a separate pan, cook bacon slices until crisp. Drain on paper towels, then crumble into small pieces.

Sauté the small onion in a little reserved bacon fat or oil until soft and lightly caramelised.

In a bowl, mix mayonnaise, ketchup, and mustard until smooth and fully blended.

Lay out the flour tortillas. Evenly distribute cooked ground beef, crumbled bacon, sautéed onion, shredded cheddar and mozzarella, lettuce leaves, tomato slices, and prepared creamy cheese sauce onto each tortilla.

Spoon the blended mayonnaise, ketchup, and mustard sauce over the fillings.

Fold in the sides of the tortilla, then roll up tightly to enclose the filling. Slice in half and serve immediately.
