Lemon Basil Salmon Rolls (Print Version)

Salmon fillets rolled with lemon, basil, cheese, and baked atop asparagus for a fresh, vibrant dish.

# Ingredients:

→ Fish

01 - 4 salmon fillets, sliced thin lengthwise for rolling

→ Dairy

02 - 120 ml ricotta cheese or cream cheese

→ Herbs & Vegetables

03 - 2 tablespoons fresh basil, finely chopped, plus extra for garnish
04 - 1 bunch fresh asparagus, woody ends trimmed
05 - 1 clove garlic, minced

→ Citrus

06 - Zest and juice of 1 lemon

→ Pantry

07 - 1 tablespoon olive oil or melted butter
08 - Salt and freshly ground black pepper, to taste

# Instructions:

01 - Preheat oven to 190°C. Arrange trimmed asparagus on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
02 - In a bowl, combine ricotta or cream cheese with lemon zest, minced garlic, chopped basil, salt, and pepper. Stir until smooth and well incorporated.
03 - Lay each salmon fillet flat and spread 1 to 2 tablespoons of the prepared cheese mixture along the center. Carefully roll up each fillet.
04 - Place salmon rolls seam-side down atop the asparagus on the baking sheet. Drizzle over freshly squeezed lemon juice and additional olive oil.
05 - Transfer to oven and bake for 18 to 20 minutes, or until the salmon is cooked through and the surface is lightly golden.
06 - Finish with fresh basil and lemon wedges before presenting.
