Lazy Lasagna Skillet Meal (Print version)

A cozy one-pan lasagna skillet with tender noodles, beefy tomato sauce, ricotta, mozzarella, and basil.

# Ingredients:

For the skillet

01 - 1 tablespoon olive oil
02 - 1 lb (450 g) 85% lean ground beef
03 - 1 medium yellow onion, finely chopped
04 - 4 cloves garlic, minced
05 - 1 1/2 teaspoons Italian seasoning
06 - 1/2 teaspoon kosher salt, plus more to taste
07 - 1/4 teaspoon black pepper
08 - 1/4 teaspoon red pepper flakes, optional
09 - 1 jar (24 oz or 680 g) marinara sauce
10 - 1 can (14.5 oz or 410 g) crushed tomatoes
11 - 2 cups (480 ml) low-sodium beef broth
12 - 10 regular lasagna noodles, broken into 1 1/2 to 2 inch pieces

For the cheese topping

13 - 1 cup (245 g) whole milk ricotta cheese
14 - 1 1/2 cups (170 g) shredded mozzarella cheese
15 - 1/3 cup (30 g) grated parmesan cheese
16 - 1/4 cup chopped fresh basil, plus more for serving

# Instructions:

01 - Heat the olive oil in a deep 12 inch skillet over medium-high heat. Add the ground beef and onion. Cook for 6-8 minutes, breaking up the meat, until the beef is browned and the onion is soft. Spoon off excess fat if needed.
02 - Add the garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for 30-45 seconds, stirring constantly, until the garlic smells fragrant.
03 - Stir in the marinara sauce, crushed tomatoes, and beef broth. Add the broken lasagna noodles and press them into the sauce so they are mostly covered.
04 - Bring to a gentle boil, then reduce the heat to medium-low. Cover and simmer for 16-20 minutes, stirring every 3-4 minutes, until the noodles are tender. Add a splash of broth or water if the skillet gets too dry.
05 - Drop spoonfuls of ricotta over the skillet. Gently nudge some into the sauce while leaving a few creamy pockets on top.
06 - Sprinkle mozzarella and parmesan evenly over the top. Cover and cook for 2-4 minutes, until the cheese melts. Remove from the heat and rest for 5 minutes.
07 - Scatter fresh basil over the skillet. Taste and add a little more salt if needed, then serve warm straight from the pan.

# Good to know:

01 - The skillet will look saucy when the noodles first finish cooking, then thicken after a 5 minute rest.
02 - Use a deep 12 inch skillet or Dutch oven so the noodles have enough room to cook evenly.
03 - A broiler-safe skillet can be broiled for 1-2 minutes after adding cheese for a browned top.
