Preheat oven to 150°C (300°F).

Separate egg whites from yolks into two different bowls.

Using an electric mixer, whip egg whites with baking powder until stiff peaks form.

In separate bowl, whisk cottage cheese and egg yolks together.

Carefully fold egg yolk mixture into egg whites bit by bit, keeping mixture airy. Then gently fold in salt and Italian herbs.

On a parchment-lined baking sheet, spoon mixture into 6 equal circles. Bake for about 20 minutes until lightly browned, checking closely after 15 minutes.
