Italian Lemon Spread (Print Version)

# Ingredients:

01 - 4 large lemons
02 - 2 cups granulated sugar
03 - 1 cup water
04 - 1/2 teaspoon vanilla extract (optional)

# Instructions:

01 - Wash and dry the lemons. Zest the lemons, then juice them, discarding the seeds.
02 - In a pot, combine the lemon juice, zest, sugar, and water. Stir until the sugar dissolves.
03 - Bring the mixture to a boil over medium heat. Reduce heat and simmer for about 30-40 minutes, stirring occasionally, until it thickens.
04 - To check if it’s ready, place a small amount on a cold plate. If it gels, it’s done. If not, continue cooking for a few more minutes.
05 - Remove from heat and let it cool slightly before pouring into sterilized jars. Seal tightly and let cool completely.
