Cheesy Caramelized Onion Dip (Print Version)

# Ingredients:

→ Caramelized Onions

01 - 2 large onions, halved and thinly sliced
02 - 1 tablespoon butter
03 - 1 tablespoon oil (like avocado oil)
04 - ½ teaspoon fresh thyme
05 - ½ teaspoon onion powder
06 - 2 teaspoons granulated sugar
07 - 1½ teaspoons balsamic vinegar

→ Creamy Base

08 - 4 ounces cream cheese, softened
09 - ½ cup sour cream
10 - ½ cup mayonnaise
11 - ¾ cup milk
12 - 1 tablespoon minced garlic
13 - ½ teaspoon red pepper flakes
14 - ¼ teaspoon black pepper

→ Cheese

15 - ¼ cup grated parmesan cheese
16 - 4 ounces brie, diced
17 - 1 cup shredded gruyere

→ For Serving

18 - Prepared crostini

# Instructions:

01 - Heat butter and oil in cast iron skillet over medium heat. Add onions and sauté 5 minutes. Add thyme, sugar, and salt. Cook 25-45 minutes on medium-low, stirring every 5 minutes until golden. Finish with balsamic vinegar.
02 - Spray slow cooker, combine onions with all ingredients except brie and gruyere. Cook on high 2 hours. Add brie, stir, top with gruyere, cook 20-25 minutes more.
03 - For crispy top, transfer to baking dish after adding brie, top with gruyere, and broil briefly until bubbly.
04 - Combine all ingredients except gruyere in bowl, transfer to 2-quart baking dish. Top with gruyere, bake at 375°F for 45-50 minutes. Broil final minute for golden crust.

01 - Recipe can be doubled or tripled for larger batches
02 - Caramelized onions can be made 48 hours ahead
03 - Can substitute gruyere with white cheddar or provolone
04 - Can make ahead and refrigerate up to 48 hours before baking
