Honey Lemon Chicken (Print Version)

# Ingredients:

01 - 2 boneless, skinless chicken breasts
02 - 1/4 cup honey
03 - 2 tablespoons fresh lemon juice
04 - 1 tablespoon soy sauce
05 - 2 garlic cloves, minced
06 - 1 tablespoon olive oil
07 - 1 teaspoon lemon zest
08 - Salt and pepper to taste
09 - 1 cup broccoli florets
10 - 1 cup baby carrots
11 - 1 red bell pepper, sliced
12 - 1 zucchini, sliced
13 - 1 tablespoon chopped fresh parsley

# Instructions:

01 - Preheat oven to 400°F (200°C).
02 - In a bowl, mix honey, lemon juice, soy sauce, garlic, olive oil, and lemon zest.
03 - Season chicken breasts with salt and pepper. Place in a baking dish.
04 - Pour half of the honey lemon mixture over the chicken. Arrange vegetables around the chicken, drizzle lightly with olive oil, and season.
05 - Bake for 25–30 minutes, or until chicken is cooked through and vegetables are tender.
06 - Simmer remaining sauce in a small pan for 5 minutes until thickened.
07 - Remove dish from oven, drizzle thickened sauce over top. Garnish with parsley and serve.
