Cheese Straws (Print Version)

# Ingredients:

01 - 1¾ cups self-rising flour (228g).
02 - ½ teaspoon paprika (smoked or sweet).
03 - ¼ teaspoon cayenne pepper.
04 - ¼ teaspoon kosher salt.
05 - 8 ounces sharp cheddar cheese, freshly grated.
06 - ½ cup unsalted butter, room temperature.
07 - 1-4 tablespoons water, as needed.

# Instructions:

01 - Combine flour, paprika, cayenne, and salt in a bowl until well mixed.
02 - Beat softened butter and fresh grated cheese in mixer for 2 minutes until smooth.
03 - Mix in dry ingredients on low speed. Add water slowly until dough feels like play dough - soft but not sticky.
04 - Cover dough with plastic wrap and let rest while heating oven to 350°F.
05 - Use cookie press to make 2-3 inch straws, or roll and cut into strips. Leave space between each on lined baking sheets.
06 - Cook for 14-17 minutes until crisp and lightly browned. Cool completely before handling.

# Notes:

01 - Can use regular flour plus 2 tsp baking powder and double salt.
02 - Fresh grated cheese works better than pre-grated.
03 - Freezing before baking helps maintain shape.
