Hibachi Noodles (Print version)

Buttery, garlicky hibachi noodles tossed in soy sauce and sesame oil, ready in 20 minutes and tasting just like the Japanese steakhouse version.

# Ingredients:

For the noodles

01 - 12 oz (340 g) lo mein noodles or spaghetti
02 - Salt for boiling water
03 - 4 tablespoons unsalted butter
04 - 4 cloves garlic, minced
05 - 3 tablespoons soy sauce
06 - 1 tablespoon sesame oil
07 - 1 teaspoon sugar
08 - 1/4 teaspoon white pepper

For the stir-fry

09 - 1 tablespoon vegetable oil, plus a drizzle for tossing noodles
10 - 1/2 medium yellow onion, thinly sliced
11 - 1 small zucchini (about 6 oz / 170 g), cut into half-moons

For garnish

12 - 2 green onions, thinly sliced
13 - 1 teaspoon sesame seeds

# Instructions:

01 - Boil the noodles in well-salted water until just under al dente, about 1 minute less than package directions. Drain and rinse with cold water to stop cooking. Toss with a small drizzle of vegetable oil to prevent sticking.
02 - Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add the onion and zucchini and cook, stirring occasionally, until softened and lightly charred at the edges, 3 to 4 minutes.
03 - Push the vegetables to one side. Add the butter to the empty part of the pan. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Toss the garlic butter together with the vegetables.
04 - Add the drained noodles to the pan and toss constantly for 2 to 3 minutes. Let them sit undisturbed for 30 seconds at a time to pick up some char, then toss again.
05 - Drizzle in the soy sauce, sesame oil, sugar, and white pepper. Toss for 1 more minute until the sauce coats every strand evenly. Taste and adjust soy sauce as needed.
06 - Transfer to a serving platter. Top with sliced green onions and sesame seeds. Serve immediately while the noodles are still glossy and hot.
