A full hibachi at home dinner with chicken, steak, shrimp, fried rice, vegetables, and creamy yum yum sauce.

# Ingredients:

For the yum yum sauce

01 - 1 cup (230 g) mayonnaise
02 - 2 tablespoons ketchup
03 - 1 tablespoon rice vinegar
04 - 1 teaspoon granulated sugar
05 - 1 teaspoon paprika
06 - 1/2 teaspoon garlic powder
07 - 2-3 tablespoons water, to thin

For the fried rice

08 - 3 cups (480 g) cold cooked white rice
09 - 2 large eggs, beaten
10 - 1/2 cup (70 g) frozen peas and carrots
11 - 2 tablespoons unsalted butter
12 - 2 tablespoons soy sauce
13 - 1 teaspoon toasted sesame oil
14 - 2 green onions, sliced

For the proteins

15 - 12 oz (340 g) boneless skinless chicken breast, cut into bite-size pieces
16 - 10 oz (285 g) sirloin steak, cut into 1-inch cubes
17 - 8 oz (225 g) large shrimp, peeled and deveined
18 - 1 1/2 teaspoons kosher salt, divided
19 - 1/2 teaspoon black pepper
20 - 2 tablespoons neutral oil, divided
21 - 3 tablespoons unsalted butter, divided
22 - 3 cloves garlic, minced
23 - 2 tablespoons soy sauce, divided

For the vegetables

24 - 1 medium zucchini, halved and sliced
25 - 1 small yellow onion, sliced
26 - 8 oz (225 g) mushrooms, sliced
27 - 1 large carrot, thinly sliced
28 - 1 tablespoon unsalted butter
29 - 1 tablespoon soy sauce
30 - Sesame seeds and lemon wedges, for serving

# Instructions:

01 - Whisk mayonnaise, ketchup, rice vinegar, sugar, paprika, garlic powder, and 2 tablespoons water until smooth. Add more water if needed to make it spoonable, then refrigerate.
02 - Heat a large griddle or skillet over medium-high heat. Scramble the eggs in a little butter, add the rice, peas and carrots, 2 tablespoons butter, 2 tablespoons soy sauce, and sesame oil. Cook for 4-5 minutes, tossing often, then stir in green onions and move to a warm plate.
03 - Season chicken with salt and pepper. Add oil to the hot surface and cook the chicken in a single layer for 5-7 minutes, turning until browned and cooked through to 165°F. Add 1 tablespoon butter, a little garlic, and a splash of soy sauce, then transfer to the platter.
04 - Season steak with salt and pepper. Sear in a hot thin layer of oil for 2-4 minutes, turning to brown the edges. Add 1 tablespoon butter, a little garlic, and soy sauce, then remove while still tender.
05 - Season shrimp lightly. Cook on the hot surface for 1-2 minutes per side until pink and opaque. Finish with 1 tablespoon butter and the remaining garlic, then move to the platter.
06 - Add zucchini, onion, mushrooms, and carrot to the griddle. Cook for 4-6 minutes until crisp-tender and lightly browned. Add butter and soy sauce, toss well, and serve with rice, proteins, sauce, sesame seeds, and lemon wedges.
