If not pre-pitted, pit dates and slice down the middle (not completely through) to create an opening

Line a freezer-safe plate or small baking sheet with parchment paper. Open dates to form pockets and arrange on the parchment

Fill each date about 75% full with nut butter, add a few nuts on top, then pinch closed. Freeze for 15-20 minutes

While dates freeze, melt chocolate and allow to cool slightly

Remove dates from freezer and dip each one in melted chocolate until fully coated. Use two spoons for easier dipping, or drizzle chocolate if preferred

Sprinkle with flakey salt and freeze for 20-30 minutes until chocolate hardens
