Healthy 5-Ingredient Date Snickers (Print version)

Chewy Medjool dates stuffed with peanut butter and peanuts, dipped in dark chocolate, and chilled until snappy.

# Ingredients:

For the dates

01 - 12 large Medjool dates, soft and pitted by hand
02 - 1/3 cup (85 g) natural creamy peanut butter
03 - 1/4 cup (35 g) roasted salted peanuts, roughly chopped

For the chocolate shell

04 - 5 oz (140 g) dairy-free dark chocolate, chopped, or dark chocolate chips
05 - 1 teaspoon coconut oil

# Instructions:

01 - Line a small baking sheet or plate with parchment paper. Slice each date lengthwise without cutting all the way through, remove the pit, and gently open the center.
02 - Spoon about 1 teaspoon peanut butter into each date. Press a few chopped salted peanuts into the peanut butter, then gently pinch the date partly closed.
03 - Place the filled dates on the parchment-lined sheet and freeze for 20-30 minutes, until firm. This makes dipping cleaner.
04 - Combine the dark chocolate and coconut oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring well after each burst, until smooth and glossy.
05 - Dip each chilled date into the melted chocolate with a fork, turning to coat. Let the excess chocolate drip back into the bowl, then return the date to the parchment.
06 - Refrigerate the dipped dates for 15-20 minutes, until the chocolate shell is set. Serve cold or let stand for 5 minutes for a softer bite.
