Healthy Chinese Ground Beef Cabbage (Print Version)

# Ingredients:

→ Main Components

01 - 1 tablespoon sesame oil
02 - 1 medium carrot, cut into matchsticks
03 - 1/2 of a medium head of green cabbage, finely sliced
04 - 1 pound ground beef, extra lean

→ Aromatics

05 - 1 tablespoon grated fresh ginger
06 - 3 garlic cloves, finely chopped

→ Sauces and Seasonings

07 - 1 tablespoon oyster sauce
08 - 1 tablespoon rice vinegar
09 - 2 tablespoons reduced-sodium soy sauce
10 - 1/4 teaspoon crushed red pepper flakes

→ Thickener

11 - 1 teaspoon cornstarch mixed with 2 tablespoons water until smooth

→ Garnish

12 - 2 green onions, thinly sliced

→ To Serve

13 - Brown or jasmine rice, freshly steamed

# Instructions:

01 - Spoon your stir-fry over a pile of hot brown or jasmine rice if you want a more filling meal, or just dig in as it is.
02 - Top everything off with those sliced green onions and taste to see if you need a little more seasoning. Take the pan off the heat.
03 - Drop in your cornstarch-water mix, stir everything well for a minute or two till the sauce looks glossy and clings to the meat and veggies. Dash in the red pepper flakes for some kick.
04 - Drizzle in your soy sauce, rice vinegar, plus oyster sauce now, and toss well so everything gets coated and the flavors blend nicely.
05 - Scatter in the cabbage and carrot. Cook, tossing for 4 or 5 minutes, so they get a little soft but still stay pretty crisp.
06 - Toss in the chopped garlic and grated ginger with the beef. Keep stirring for about a minute so those smells really come out.
07 - Add the ground beef after your pan is good and hot. Use your spatula to break it up and keep flipping until all the meat’s browned nicely. Scoop out extra grease if you like things leaner.
08 - Pour sesame oil into a cold skillet or wok, turn up to medium-high, and swirl it around so the bottom is covered once hot.
