01 - 1 1/2 lb (680 g) boneless skinless chicken breast or thighs, cut into 1-inch pieces
02 - 1 1/2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 3/4 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 3/4 teaspoon kosher salt
07 - 1/2 teaspoon black pepper
08 - 1/8 teaspoon cayenne pepper, optional
09 - 1 tablespoon chopped fresh parsley, for serving
10 - Lemon wedges, for serving

For the creamy garlic dipping sauce

11 - 1/2 cup (115 g) mayonnaise
12 - 1/3 cup (80 g) sour cream
13 - 1-2 small garlic cloves, finely grated
14 - 1 tablespoon fresh lemon juice
15 - 1 tablespoon chopped fresh parsley
16 - 1/4 teaspoon kosher salt
17 - 1/4 teaspoon black pepper

# Instructions:

01 - Preheat an outdoor grill, grill pan, or cast iron skillet to medium-high heat. Oil the grates or pan lightly so the chicken releases cleanly.
02 - Pat the chicken dry. Toss it with olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne until every piece is evenly coated.
03 - In a small bowl, stir together mayonnaise, sour cream, grated garlic, lemon juice, parsley, salt, and pepper. Cover and refrigerate while the chicken cooks.
04 - Arrange the chicken in a single layer. Grill for 2-3 minutes per side, turning as needed, until browned and the thickest piece reaches 165°F.
