Authentic Greek Potatoes (Print Version)

# Ingredients:

01 - 2.5 pounds baking potatoes, peeled and cut into eighths
02 - 1.5 cups chicken broth
03 - 0.5 cup olive oil
04 - 0.25 cup lemon juice
05 - 3 cloves garlic, minced
06 - 1 tablespoon dried oregano
07 - 1 teaspoon salt
08 - Fresh ground pepper, to taste
09 - Sprinkle of paprika (optional)

# Instructions:

01 - Peel potatoes and cut into thick wedges. Rinse well and drain.
02 - In a 13×9 inch baking dish, mix chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper.
03 - Add potatoes to the mixture and stir to coat evenly.
04 - Bake, uncovered, at 350°F (175°C) for 1.5 hours. Test with a fork, and cook an additional 15 minutes if needed.
05 - For best results, allow the dish to sit for 10 minutes before serving.

# Notes:

01 - Use any type of potatoes, such as Yukon Gold, Russets, red potatoes, or new potatoes.
02 - If using fresh, new potatoes, you can simply wash them and leave the skin on if preferred.
03 - Cooled leftovers can be refrigerated in a covered container for up to four days.
04 - To reheat leftovers, bake at 350°F (175°C) for about 15 minutes or use a microwave until warm.
