01 - 1 lb (450 g) chicken tenderloins
02 - 1 tablespoon extra-virgin olive oil
03 - 1 tablespoon fresh lemon juice
04 - 1 teaspoon lemon zest
05 - 1 teaspoon red wine vinegar
06 - 2 cloves garlic, finely minced
07 - 1 teaspoon dried oregano
08 - 1/2 teaspoon dried thyme
09 - 1/2 teaspoon smoked paprika
10 - 3/4 teaspoon kosher salt
11 - 1/4 teaspoon black pepper
12 - 1 tablespoon chopped fresh parsley, for finishing

# Instructions:

01 - Pat the chicken tenderloins dry with paper towels. Trim any tough white tendon ends if needed.
02 - In a medium bowl, whisk together olive oil, lemon juice, lemon zest, red wine vinegar, garlic, oregano, thyme, paprika, salt, and pepper.
03 - Add the chicken and toss until evenly coated. Let it sit while a skillet heats, or marinate for 10-30 minutes for stronger flavor.
04 - Heat a large skillet over medium-high heat. Add the tenders in one layer and cook for 3-4 minutes per side, until golden and the thickest piece reaches 165°F.
05 - Transfer the chicken to a plate and rest for 3 minutes. Sprinkle with parsley and serve with lemon wedges, salad, or tzatziki if desired.
