Garlic Parmesan Chicken Bites (Print version)

Juicy skillet chicken bites tossed in garlic butter and parmesan, ready in about 25 minutes.

# Ingredients:

For the chicken

01 - 1 1/2 lb (680 g) boneless, skinless chicken breasts, cut into 1-inch pieces
02 - 1/3 cup (42 g) all-purpose flour
03 - 1 teaspoon Italian seasoning
04 - 1/2 teaspoon sweet paprika
05 - 1 teaspoon kosher salt
06 - 1/2 teaspoon black pepper
07 - 2 tablespoons olive oil

For the garlic parmesan finish

08 - 3 tablespoons (42 g) unsalted butter
09 - 5 cloves garlic, minced
10 - 1/2 cup (50 g) freshly grated parmesan cheese
11 - 2 tablespoons chopped fresh parsley
12 - 1 tablespoon fresh lemon juice
13 - Red pepper flakes, optional

# Instructions:

01 - Cut the chicken into even 1-inch pieces and pat very dry with paper towels.
02 - In a bowl, mix flour, Italian seasoning, paprika, salt, and pepper. Toss the chicken in the mixture until lightly coated, then shake off any excess.
03 - Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook 3-4 minutes per side until golden and 165°F in the center. Work in batches if needed.
04 - Reduce heat to medium-low. Add butter to the skillet, then stir in the garlic for 30-60 seconds until fragrant but not browned.
05 - Return all chicken to the skillet and toss in the garlic butter. Remove from heat, add parmesan, parsley, lemon juice, and red pepper flakes if using. Toss until coated and serve hot.

# Good to know:

01 - Best served hot right after the parmesan is tossed in.
02 - Cook chicken to 165°F in the center for food safety.
03 - Cut chicken evenly so every piece finishes at the same time.
