Chili Oil Noodles (Print Version)

# Ingredients:

01 - Thick wheat noodles (4 oz).
02 - Neutral oil (3 tablespoons).
03 - Garlic, minced (3 cloves).
04 - Sichuan chili flakes (1 tablespoon).
05 - Green onion, chopped, divided (1).
06 - Light soy sauce (1/2 tablespoon).
07 - Dark soy sauce (1/2 teaspoon).
08 - Chinese black vinegar or rice vinegar (1/2 teaspoon).
09 - Sugar (1/4 teaspoon).
10 - Salt or chicken bouillon powder (1/4 teaspoon).
11 - Cilantro for garnish (optional).
12 - Additional green onion for garnish (optional).
13 - Toasted sesame seeds for garnish (optional).

# Instructions:

01 - Cook noodles according to package. For cold noodles, rinse under cold water after cooking.
02 - Add garlic, chili flakes, white parts of green onion, soy sauces, vinegar, salt, and sugar over noodles.
03 - Heat oil in saucepan until sizzling hot.
04 - Pour hot oil over ingredients, mix until noodles are evenly coated. Add garnishes and serve.

# Notes:

01 - Can be served hot or cold.
02 - Can add protein or vegetables to make heartier.
03 - Sugar can help neutralize heat if too spicy.
