Garlic Butter Steak Bites with Parmesan Cream Sauce (Print version)

# Ingredients:

For the steak bites

01 - 1 1/2 lb (680 g) sirloin steak or ribeye, cut into 1-inch cubes
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1/2 teaspoon paprika
05 - 1/4 teaspoon onion powder
06 - 1 tablespoon olive oil
07 - 3 tablespoons unsalted butter
08 - 5 cloves garlic, minced

For the parmesan cream sauce

09 - 1/2 cup (120 ml) low-sodium beef broth
10 - 3/4 cup (180 ml) heavy cream
11 - 1/2 teaspoon Italian seasoning
12 - 3/4 cup (75 g) freshly grated parmesan cheese
13 - 1 teaspoon fresh lemon juice, optional
14 - 2 tablespoons chopped fresh parsley
15 - Extra salt and black pepper, to taste

# Instructions:

01 - Pat the steak cubes very dry with paper towels. Toss with salt, pepper, paprika, and onion powder until evenly coated.
02 - Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer, working in batches if needed, and sear for 2-3 minutes until browned on the outside.
03 - Reduce heat to medium. Add butter and minced garlic to the skillet with the steak and toss for 30-60 seconds, just until fragrant. Transfer the steak to a plate.
04 - Pour beef broth into the skillet and scrape up the browned bits from the bottom. Simmer for 1 minute.
05 - Stir in heavy cream and Italian seasoning. Simmer gently for 2-3 minutes, then lower the heat and stir in parmesan until melted and smooth.
06 - Return steak and any juices to the skillet. Toss in the sauce for 1 minute, just until warm. Finish with parsley and lemon juice if using, then serve hot.
